Instant Pot Pasta Fagioli Soup Recipe

Pasta Fagiole is a classic, hearty Italian soup. Traditionally, it includes pasta, meat, beans, and vegetables. Pasta e Fagiole literally means “pasta and beans!”

It is filling and delicious – and because it’s made in your Instant Pot, it is also quick to prepare!

CAN I USE DRY BEANS FOR INSTANT POT PASTA FAGIOLI SOUP RECIPE?

You can definitely use dry beans, but the recipe will take longer. You will want to soak them before adding them to the recipe. They will work just as well, though!

CAN I USE A DIFFERENT TYPE OF MEAT FOR INSTANT POT PASTA FAGIOLI SOUP RECIPE?

We’re partial to ground beef for this recipe, but you definitely can! Sweet Italian sausage would work well with the flavors in this dish.

WILL THIS INSTANT POT PASTA FAGIOLI SOUP RECIPE FREEZE WELL?

It will freeze well! I would suggest adding some additional broth to the soup upon thawing and reheating, just because the pasta and beans will absorb some of the liquid. The leftovers make an excellent lunch or quick weeknight dinner!

Ingredients

  • 1 pound cooked ground beef
  • 1/2 large red onion chopped
  • 1 cup carrots chopped
  • 2 cans 14.5 oz diced tomatoes
  • 1 can kidney beans drained and rinsed
  • 1 can white beans drained and rinsed
  • 3 cups  beef broth
  • 1 jar 24 oz pasta sauce
  • 2 tsp oregano
  • 1 T  Tabasco sauce
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup  dry pasta (orzo, macaroni, something small)

Instructions

  • Brown ground beef in "Instant Pot", on Saute function, until meat is no longer pink. Drain grease.
  • Chop onion.
  • Peel and chop carrots (I used 2)
  • Add all ingredients to Instant Pot.
  • Close lid and vent.
  • Cook on Manual or Pressure Cook, high pressure, 4 minutes.
  • Quick Release the pressure.
  • Top with mozzarella cheese and serve in individual bowls.
  • For more spice, add more Tabasco sauce to individual bowls.

A few weeks ago I think I mentioned that our Yorkshire Terrier had some puppies.  Below is our youngest with one of the pups.  The kids spoil those dogs, they often treat them like babies.  They both are so cute!
