Instant Pot Taco Soup is an Easy, Delicious Way to do Taco Night Without the Mess!

We love Instant Pot Ground Beef recipes!   When feeding a family the size of ours, we are constantly looking to stretch our grocery budget.  Meals like this taste great and they are not too expensive, and yet still easy in the Instant Pot.  Some of our favorite Instant Pot Ground beef recipes include include Instant Pot Cheeseburger Macaroni and Instant Pot Stuffed Pepper Soup.

Instant Pot Taco Soup

We all love Taco Night, but honestly…the mess gets to be a bit too much! You’ll dirty a pan for browning and seasoning the meat and multiple dishes for all the fixings. Then you have to heat up the shells, and if any of them are broken, someone gets fewer tacos. When you have a family who loves tacos, that’s not a fun thing to figure out!

There has to be an easier way to do it, right? Right.

My Instant Pot Taco Soup is the perfect answer! It has all the delicious flavors and textures of Taco Night without the mess and without the drama. It also makes quite a bit, so there’s plenty for everyone!

IS INSTANT POT TACO SOUP REALLY A ONE-POT MEAL?

You bet it is! This is one of my favorite things about my Instant Pot. Not only will it do just about everything in the cooking process, it does so quickly and easily! You can brown the meat, saute the vegetables, and cook the soup in a fraction of the time it would normally take.

In addition, pressure cooking the soup melds all of those wonderful flavors together in a way that makes it taste like it’s been cooking for hours. Whip up a batch of Southern Cornbread Muffins and you’ve got a meal everyone will love! 

CAN I USE ANOTHER TYPE OF MEAT?

Ground beef is my go-to, since it’s easy to come by, flavorful, and easy to use. You can use any type of ground meat you would like, though! If you use a very lean meat like ground turkey, I would suggest sautéing it with a bit of the taco seasoning to give the flavor a bit of “oomph.” Any meat you like will work, though!

By the way…if you happen to have some Instant Pot Taco Meat in the freezer, you can substitute it for the ground beef in this recipe! You may want to ease up on the seasoning mix for the soup, depending on your family’s tastes.

WILL INSTANT POT TACO SOUP FREEZE WELL?

This soup freezes exceptionally well! Just freeze it without the toppings (some of them don’t do so well in the freezer). When you’re ready for a quick and easy meal, just pull it out, thaw it, and heat it up!

Ingredients

  • 2 lbs ground beef
  • 2 15 oz cans of chili beans
  • 2 15 oz cans diced tomatoes
  • 2 15 oz cans corn drained
  • 4 Tbsp chili powder
  • 1 Tbsp ground cumin
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 32 oz beef broth
  • Toppings: crushed tortilla chips shredded cheddar cheese and sour cream

Instructions

  • Using the Saute function, brown ground beef in Instant Pot.
  • Drain grease.
  • Place all ingredients, except optional toppings, into Instant Pot.
  • Cook on manual or pressure cook, high pressure for 15 minutes.
  • Quick release or slow release the vent.
  • Stir and dip into individual bowls.
  • Top with cheddar cheese, sour cream and broken up tortilla chips.
  • Serve!

Happenings From Our Family Of 9

We have been blessed with some milder temperatures of late.  Its been great for outdoor activities such as pictured below.  Its has been so nice to see the kids outside instead of hanging out inside all day!  Their cousin even came to swim with them.  They had so much fun!
