SLOW COOKER PORK CARNITAS NACHOS
We love carnitas – savory pulled pork with just the right amount of spice – and there are so many amazing ways to use this flavorful meat! Pork carnitas are wonderful in tacos, burritos, and so many more dishes. One of our favorite ways to use carnitas is in nachos!
With tender pork, onions, garlic, and chipotle, this dish will soon be a favorite in your family!
HOW DO I USE CHIPOTLE CHILIES IN ADOBO?
You will notice that this recipe calls for less than a full can of chipotle chilis in adobo. Be sure not to use the entire can! These chilies add a wonderfully warm spice to the recipe, but they are very potent. Using more than is called for will make this recipe very spicy!
However, you can refrigerate or freeze any leftovers. If you have plans to use them within a few days, just refrigerate any leftovers in a small, airtight container. Otherwise, you can freeze them until you’re ready to use them!
CAN I FREEZE SLOW COOKER PORK CARNITAS?
You can definitely freeze the pork carnitas! Then, just thaw what you need for nachos, warm them up, and pile them on! This recipe makes plenty of pork carnitas, so if you have leftovers, stick them in the freezer.
CAN I ADJUST THE SPICE LEVEL?
Yes, the spice level is easy to adjust! If your family likes pork carnitas that are a bit less spicy, simply use less chipotle chilies in adobo. Your carnitas will still have a delicious combination of smoky flavor and spice!

Slow Cooker Pork Carnitas Nachos
Ingredients
- 3 lb boneless pork butt
- 1 onion
- 4 tsp minced garlic
- 2 Tbsp chopped chipotle chilis in adobo sauce
- Salt & pepper to taste
- ¼ cup water
- Tortilla chips
- Non-stick cooking spray
- Shredded cheese
- Salsa
- Sour cream
- Sliced jalapenos
Instructions
- Chop 1 onion
- Spray slow cooker with non-stick cooking spray
- Place pork pork butt, onion, garlic, chilis, salt, pepper & water into slow cooker
- Cook on high 6 hours
- Shred pork & mix with sauce in slow cooker
- Serve over chips with toppings of choice
Freezer Bag Instructions:
- Chop 1 onion
- Place pork pork butt, onion, garlic, chilis, salt, pepper & water into gallon size freezer safe bag
- Label bag and lay flat to freeze
- Remove from freezer the night before you plan to use it
- Spray slow cooker with non-stick cooking spray
- Place contents of bag into slow cooker
- Cook on high 6 hours
- Shred pork & mix with sauce in slow cooker
- Serve over chips with toppings of choice

Ryan and I were able to go on a cruise in May to the Yucatan Peninsula in Mexico as well as the Island of Cozumel. We’ve found that we LOVE cruising and hope to plan many more to come! Here’s a photo of us as we were waiting for our snorkeling & beach buggy excursion. We had a great time that day!
