Slow Cooker Pineapple Pork Tacos

Pulled Pork Tacos with Pineapple are so simple to throw in the slow cooker.  My whole family loved them.  So much so that my daughter has begged me to make them again and again!

Pulled Pork Tacos with Pineapple made in the Slow Cooker

I have to admit, I was very nervous about putting pineapple in my pulled pork tacos.  I’ve never been one to like meat and fruit together.  Growing up, I never liked pineapple.  My kids typically love it though, so I decided to go for it for them. But….I couldn’t make myself put the pineapple in the whole batch of pulled pork tacos.

If you notice…. there’s pineapple in the above picture, but not in the one below.  That way I had an escape plan.  LOL!

I could excuse myself from eating the pineapple if I wanted to.  I tried both with pineapple and without pineapple though and I liked both and could easily choose either version for dinner.

My kids though, almost all of them (I have 7) LOVED the pulled pork tacos with pineapple in it.  In fact, they gobbled it up before I could get any more.

If you happen to have someone in your family who has an aversion to pineapple, I encourage you to do the same.  Put it in some of the meat, but not all of it.    It’s good both ways.

What Toppings are Good on Pulled Pork Tacos with Pineapple?

You can eat whatever toppings you normally want on tacos. Here’s some of my preferred toppings:

  1. Sour cream
  2. Guacamole
  3. Salsa
  4. Lettuce
  5. Tomatoes
  6. Shredded cheese
  7. Onions
  8. Cilantro

Here’s some ideas of what we like to serve with our pulled pork tacos.

  1.  Spanish Rice
  2. Refried Beans
  3. Guacamole Salad

Ingredients

  • 2 lb boneless pork shoulder roast
  • 1 ½ cup lettuce
  • 4 tomatoes
  • 1 tsp minced garlic
  • 2 tsp lime juice
  • 1 envelope taco seasoning
  • 1 8 oz can crushed pineapple
  • 1 package taco shells
  • 1 cup shredded cheddar cheese
  • 1 cup sour cream
  • 1 cup salsa
  • Non-stick cooking spray

Instructions

  • Spray slow cooker with cooking spray
  • Place pork in slow cooker; sprinkle with taco seasoning mix and minced garlic.
  • Cook on low 7 to 9 hours
  • Shred pork
  • Stir in pineapple and lime juice.
  • To serve, divide pork among taco shells and top with remaining ingredients.
