Easy Slow Cooker Bacon Spinach Quiche

Breakfast.  It’s what’s for dinner!

 

I don’t know about you, but I seriously love eating breakfast for dinner.  Maybe it’s because I hate cooking in the  morning.  I’m so not a morning person, but I really enjoy a hot breakfast.  If I’m going to eat a hot meal for breakfast, I’m going out to eat, lol.  But….since I never cook it in the mornings, it makes a perfect night time meal, too.  This one is so easy to throw together, as you’ll see in the video.

We started with these simple ingredients.  Eggs, milk, butter, spinach, cheese, bacon and salt & pepper.

 

And after we cooked it, it looked like this.  I know, not the prettiest thing you’ve ever seen, but it sure was mighty tasty!  If you don’t like spinach or have a child or husband who dislikes it, just leave it out and/or replace it with a vegetable everyone likes.  I have tried green peppers, broccoli, mushrooms, etc., and they’re all good.  Of course, if your family is not happy about any veggies in their eggs, leave them all out and have it a meat only quiche.  The nice thing about quiche dishes is that you CAN change it up to fit your family.  This is a perfect dish for Christmas morning or even New Year’s Day!  Keep it in mind, because it’s so, so very easy!  I don’t know about you, but I happen to like easy recipes, as long as it’s also tasty!

Easy Slow Cooker Bacon Spinach Quiche

This spinach bacon quiche may be one of the easiest recipes to quickly throw together for the slow cooker! If you don't like spinach, you can leave it out OR replace it with another vegetable (like broccoli, green peppers, onions, etc.) You'll love it!

Ingredients

  • 1 tbsp butter
  • 10 eggs
  • 1 cup milk
  • 1 cup chopped spinach
  • 8 ounces shredded cheese
  • 1/2 tsp black pepper
  • 10 pieces bacon chopped (or sub for 3/4 cup of real bacon bits)
  • 1/2 cup chopped spinach or any other vegetable

Instructions

  • Grease slow cooker with butter
  • Combine eggs, milk, cheese, spinach and pepper in a large mixing bowl and then add to slow cooker.
  • Sprinkle cooked bacon over the top
  • Cover and cook on low for 4 hours
  • Serve!
