Slow Cooker Mozzarella Chicken & Pasta is a Satisfying, Delicious, and Easy Way to Treat Your Family to a Wonderful Dinner!

We love Slow Cooker Chicken recipes! Some of our family’s favorites include Slow Cooker Chicken, Potatoes, and Carrots and Chicken Tortellini with Alfredo.

SLOW COOKER MOZZARELLA CHICKEN & PASTA

This recipe just has so much to love. Chicken is always a winner for weeknight dinners, but mozzarella, pesto, Parmesan…add these in, and the recipe is an instant winner. Mozzarella Chicken & Pasta is sure to please!

With the slow cooker, this delicious dish is so easy to prepare. It does almost all the work for you!

DOES THIS SLOW COOKER MOZZARELLA CHICKEN & PASTA FREEZE WELL?

It certainly does! I recommend freezing it without the pasta, since it is so easy to cook separately and add in. This way, the texture of the pasta is not affected. You can freeze the mozzarella, but I do suggest freezing it in a separate bag. Just pack the freezer bags together in a kit, and when you’re ready to pull it out, everything is there!

CAN I LEAVE THE PESTO OUT OF THE RECIPE?

You can, but I really recommend leaving it in! It really enhances the flavor of the dish.

If you are worried that your kids might not like it, I encourage you to try it and see! My kids loved it and didn’t mind “green” in the dish at all. It melds so well with the creamy sauce and the cheese!

CAN I USE HOMEMADE PESTO FOR THIS RECIPE?

By all means! I actually love using homemade pesto when my basil’s overflowing (and I have the ingredients on hand). I just know this isn’t always the case, so feel free to use jarred pesto! There are some amazing brands out there. Either way, enjoy!

Ingredients

  • 6 boneless skinless chicken breasts
  • ½ tsp salt
  • ¼ tsp pepper
  • ¼ tsp dried basil
  • 1 cup jarred pesto
  • 1 lb rotini
  • 1 Tbsp lemon
  • ¼ cup butter
  • ½ cup Parmesan cheese
  • 2 cups shredded mozzarella
  • Non-stick cooking spray

Instructions

  • Spray slow cooker with non-stick cooking spray
  • Place chicken in slow cooker
  • Sprinkle with salt & pepper
  • Spread pesto on chicken & lemon juice over chicken
  • Cook on low 5-6 hours
  • Cook pasta according to package
  • Shred chicken & return to cooker
  • Add remaining ingredients and stir
  • Cook on low 10 min

Freezer Bag Instructions

  • This recipe requires no prep work on freezer day
  • Label chicken & lay flat to freeze
  • Remember to remove bag from the freezer the night before cooking
  • Spray slow cooker with non-stick cooking spray
  • Place contents of bag in the slow cooker
  • Sprinkle with salt & pepper
  • Spread pesto on chicken & drizzle lemon juice over chicken
  • Cook on low 5-6 hours
  • Cook pasta according to package
  • Shred chicken & return to cooker
  • Add remaining ingredients and stir
  • Cook on low 10 min

Happening From Our Family Of 9

This is my 16 year old daughter Reagan.  Hopefully she won’t kill me for sharing this picture, lol.  We went out to Braum’s for ice cream on their 50th anniversary sale, where they had 50 cent cones and $1 single dip sundae’s.  If you’ve never visited a Braum’s be sure to check them out when you’re in the Midwest.  So yummy!  They grow their own meat, have their own dairy and produce a lot of the food that they sell themselves.  The ice cream is amazing!  We took the whole family, but this was the only decent photo I got.  I need to remember to take more pictures while I’m out and about, I guess.
