Instant Pot Stuffed Pepper Soup
If you love stuffed peppers, or even if you’ve never had them and think you would love them, this Instant Pot Stuffed Pepper Soup is for you! The flavors explode in your mouth and the ingredients aren’t expensive at all!
Stuffed peppers have been around for a long time and is currently popular in our house! That’s why I was excited to perfect my new Instant Pot Stuffed Pepper Soup recipe, that takes all of the delicious tastes from the stuffed peppers recipe, but turns it into a soup!
CAN I MAKE THIS INSTANT POT STUFFED PEPPER SOUP THINNER?
If you don’t like a super thick soup, you can add more beef broth to make it thinner, no worries!
DOES INSTANT POT STUFFED PEPPER SOUP FREEZE WELL?
Yes, this soup freezes very well! I like to cook it and put it in a gallon size bag! It reheats great. Or…I can prepare it in advance and freeze the ingredients ahead of time, cook it the day I plan to serve it.
CAN I USE A DIFFERENT TYPE OF RICE?
The recipe calls for brown rice, but if you want to use a different kind, you can! Some people prefer Jasmine Rice….and some people even prefer Quinoa! It all works great, but you will need to adjust your cooking times, according to Instant Pot instructions.

Instant Pot Stuffed Pepper Soup
Ingredients
- 1-2 lbs ground beef
- 1 medium onion chopped
- 2 green peppers sliced
- 2 red peppers sliced
- 2 15 oz cans diced tomatoes undrained
- 1 15 oz can of tomato sauce
- 1 15 oz can of water
- 1 can corn optional
- 1 cup cooked brown rice
- 1 clove garlic
- 1/2 tsp parsley
- 1/2 tsp oregano
- 2 Tablespoons brown sugar
- 2 tsp salt
- 1 1/2 tsp pepper
Instructions
- Brown ground beef with onion in Instant Pot using the Saute function.
- Drain beef and onions.
- Add sliced peppers, tomatoes and remaining ingredients, except rice to the Instant Pot.
- Stir in cooked rice.
- Cook at high pressure 7 minutes. Then wait 10 minutes before releasing the pressure.

This is my husband, my 2 sons and my 16 year old daughter. They were helping a friend of ours campaign in our local political campaign. They had just got done driving through a parade, handing out pamphlets and handing out yard signs to anyone wanting to support the candidate. They have really enjoyed being on the campaign trail helping in any way that they can. And since we homeschool, I thought it was a pretty cool way to see firsthand some of the things our politicians have to do in a political campaign.
