I love Instant Pot Chili Mac! Not only is it just delicious, it’s also so easy to dump and go….putting it all on automatic! Even my kids love this recipe, which is a HUGE win for me.

Not only that, but you can also switch up the flavors in it so easily! Want more of a limey taste? Add some zest and go at it! Want more of a Mexican taste? Taco seasoning works great!

I love that the ingredients for this recipe cost less than $10, yet it makes enough to feed a large family!

WHAT IS GOOD TO SERVE WITH INSTANT POT CHILI MAC?

While it’s almost good to serve by itself, you may want to add in some extras on the side for added flavor! Here are some great ideas to serve it with:

  • Refried beans
  • Chips and salsa
  • Steamed veggies like broccoli
  • A delicious salad

DO I HAVE TO USE CHEDDAR CHEESE?

This Chili Mac is good with all sorts of cheese! Some of my other favorites to add are the taco blend, Colby Jack and even mozzarella! Mix it up and see what your favorite is!

DOES IT FREEZE WELL?

Yes and no. The pasta should be cooked al dente, or a little firm and then it would be a good candidate for refreezing.  In order to do that, you’d need to cook it less time in the Instant Pot.  If it’s too soft, it’s likely to turn mushy or disintegrate when it is reheated.

HOW CAN I MAKE IT SPICIER?

There are a few ways you can make it spicier for all of you that love that spice! You can:

  • Add rotel tomatoes
  • Add some hot sauce to the finished product
  • Add taco seasoning and/or cayenne pepper
  • Do NOT add additional liquids.

Ingredients

  • 1.5 pounds lean ground beef
  • 1 onion diced
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • ½ teaspoon dried thyme
  • ¼ cup ketchup
  • 3 cups elbow macaroni
  • 3 cups beef broth
  • 1 cup shredded cheddar cheese

Instructions

  • Brown ground beef with onion in Instant Pot on Saute function.
  • Add salt, pepper, dried thyme, ketchup, elbow macaroni, and beef broth.  
  • Place lid on and close valve.  Cook on high pressure for 6 minutes.
  • Quick release and add cheese.  
  • Stir and let melt for a few minutes before serving.

Family Happenings This Week From our Family of 9:

This past week, our son Colton, who is child #6 out of 7,  turned 7 years old.  Some days, I can’t believe my kids are as old as they are. It seems like just yesterday, he was born.  He was a fussy baby, but he’s a pretty cool little boy!  We took him to the park in our town to celebrate his birthday where we have a miniature train to ride and a merry go round and miniature golf.  The town keeps the prices extremely low and it only costs a nickel to ride the carousel,  a quarter to ride the train and a dollar to play mini golf.  It’s always a nice evening out, especially since we live in a relatively small town.  Here’s a picture of him on the train with his friends.  He’s on the right, in the blue shirt.
