INSTANT POT BAKED POTATOES
I love baked potatoes…they’re so easy and inexpensive, but so versatile! They can serve as a delicious side with just about any main dish, but they also make a wonderful main dish when topped with Instant Pot Wendy’s Copycat Chili or Instant Pot Pork Carnitas.
Baked potatoes are easy to make in the oven or slow cooker, but they take so long. When you have a busy schedule and hungry mouths to feed, it doesn’t always work to plan ahead. With your Instant Pot, you can have fluffy, delicious baked potatoes ready to serve in minutes!
DOES COOKING TIME CHANGE WITH THE SIZE OF THE POTATOES?
For most Instant Pot recipes, changing the quantity will change the amount of time it takes to come to pressure, but it won’t really change the cooking time. This isn’t the case for baked potatoes.
Because the potatoes are pretty dense, the cooking time is different when you change the size of the potatoes. The cooking time in this recipe is for medium potatoes, like those you get in a 5 or 10 pound bag at the grocery store. If your potatoes are larger, you will want to increase the cooking time.
WHAT ARE SOME TOPPING IDEAS FOR INSTANT POT BAKED POTATOES?
There are so many possibilities! You can go minimalist with butter, salt, and pepper, or go all out with a loaded baked potato with all the fixings. You can also scoop out some of the baked potatoes to make potato skins! (Reserve what you scoop out for potato soup, potato pancakes, or mashed potatoes.)
You can also top your Instant Pot Baked Potatoes with Instant Pot Taco Meat, Instant Pot Shredded Mexican Chicken, or Slow Cooker Sweet Pulled Pork. Get creative and have fun!
WILL INSTANT POT BAKED POTATOES FREEZE WELL?
This is one of the few recipes that really will not freeze well. Potatoes don’t tend to react well to being frozen, unfortunately. They discolor and take on an odd texture. However, my Instant Pot Baked Potatoes cook up so quickly that you can easily have them ready for any meal, even when your schedule is tight!
