Instant Pot Spanish Rice with Ground Beef

When it comes to cooking in your Instant Pot, who says you can’t have a bit of fun creating recipes that will be amazing for your tastebuds? This Instant Pot Spanish Rice recipe has just the right kick to be a truly tasty treat and in can almost be an all in one meal.  Just add a veggie and you’re all set.  

Plus, it’s one recipe that reheats well to enjoy over and over again! 

WHAT IF I DON’T HAVE ANY GROUND BEEF?

No worries. If you don’t happen to have any ground beef, simply substitute it for pork or turkey instead. And if you’re don’t have any of those options, you can simply leave it out. This recipe is so versatile that it holds its own really well, regardless of what alterations or changes you need to make. 

It’s even a possibility to add in some vegetables or tofu if you’re really wanting to add in some extras! 

 

CAN I ADD ANY ‘EXTRAS’ TO THIS INSTANT POT SPANISH RICE?

Absolutely! While it’s pretty perfect the way it is, you can add anything you want to spruce it up even more. Add in some onions, jalapenos or even some shredded cheese at the end. The sky is the limit on how you can really change up this flavor. Our personal favorite add in is jalapenos.  

WILL THIS INSTANT POT SPANISH RICE FREEZE WELL?

When it comes to freezing rice, it can get a little bit tricky. While it’s 100% possible to do so, there’s a chance that the texture might not be quite the same once it thaws. However, if you’re okay with that and know that ahead of time, you can freeze this rice recipe with success.

Just remember to use a freezer safe container or bag so it stays as fresh as possible!

Ingredients

  • 1 ½ pounds ground chuck
  • 1 green bell pepper diced
  • 1 onion diced
  • 1 8 ounce can tomato sauce
  • ½ teaspoon garlic powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon chili powder
  • 1 cup long grain white rice
  • 1 ½ cup water

Instructions

  • Using the saute function, heat the electric pressure cooker to “hot.” Add the ground beef and cook until brown, chopping into small pieces. Drain well.
  • Return meat to pressure cooker with all other ingredients. Stir to combine.
  • Cover and turn valve to sealing. Set pressure cooker to manual or pressure cook for 10 minutes. Natural release for 5 minutes before using quick release.
  • Fluff rice with a fork and serve.

This is our daughter Quinnly celebrating her 5th birthday at our favorite Mexican Restaurant.  I figured it was appropriate, since… this is a Mexican recipe after all.  The funny thing about this, is that she didn’t even like that big yummy dessert of fried ice cream.  We all ended up sharing it instead.  She was thrilled to be celebrating though!  🙂
