INSTANT POT REFRIED BEANS
One of the things I love about our favorite Mexican restaurants is their delicious, creamy refried beans. That might sound odd, but they’re just so good! They’re the perfect side dish to accompany almost anything I order.
As much as I like their refried beans, going out to eat whenever I get a craving for Mexican dishes can get expensive! And honestly, I don’t often have hours to spend soaking, prepping, cooking, and finishing the beans. That’s where the beauty of the Instant Pot comes in!
With this handy gadget, you’ll have amazing, homemade refried beans in a fraction of the time. They’re also a lot healthier than many versions. Enjoy!
WHY ARE THEY CALLED REFRIED BEANS?
Technically, refried beans (or frijoles refritos) aren’t fried twice, but “fried well.” Traditional refried beans are fried in lard or another type of fat once they are cooked, but before they are pureed. My version of Instant Pot Refried Beans saves you both time and additional calories!
DO I HAVE TO USE LARD OR ANY OTHER FATS TO GET A CREAMY CONSISTENCY?
With my Instant Pot Refried Beans recipe, you don’t have to use lard or any other additional fats. The beans are pressure cooked with delicious, natural ingredients and spices to achieve an amazing flavor. They are then pureed with a bit of the leftover cooking liquid to achieve the texture and consistency we all love!
WILL INSTANT POT REFRIED BEANS FREEZE WELL?
This is yet another reason to love this recipe – Instant Pot Refried Beans freeze amazingly well! You can freeze any leftovers in a freezer bag or an airtight container, and they will not change color or consistency.
If refried beans are in the freezer for a long time, they can tend to dry out a bit. Never fear, though – just add a bit of water, broth, or olive oil while reheating them and they will come together perfectly!
