Low Carb Instant Pot Cheeseburger Soup

I’m a fan, okay a BIG fan, of cheeseburger soup. It’s just SO good and it especially makes my stomach happy after a long days work! The best part is that the entire family loves it, too and it’s truly not that difficult to make! 

Last fall, I published my very popular Instant Pot Cheeseburger Soup recipe and it has gotten rave reviews. This fall, I’m showing you how to make it low-carb. I hope you enjoy this one as much as I do!

It is chock full of vegetables that give it an amazing flavor to absolutely LOVE!  

Can I make this Low Carb Instant Pot Cheeseburger Soup ahead of time?

You sure can! It will freeze very well. I recommend making a big, delicious batch of it and then freezing it meal-sized portions so your entire family can enjoy it in the snap of some fingers!

What should I serve with Low Carb Instant Pot Cheeseburger Soup?

Not bread.  That is, not unless you’re eating this as a non-low carb soup!  I like to serve a good green leafy salad, or a side of vegetable sticks and dip.  You could also make some low-carb bread sticks.  

Can I substitute ground pork for ground beef in this Low Carb Instant Pot Cheeseburger Soup?

Yes! Ground pork makes an excellent substitution if you don’t have any ground beef and it would work out perfectly!  You could also use ground turkey.

Low Carb Instant Pot Cheeseburger Soup

Ingredients

  • 2 lbs lean ground beef
  • 1 lb bacon
  • 4 stalks of celery
  • 2 onions
  • 1 carrot
  • 1 head of broccoli
  • 1 head of cauliflower
  • 6 cups chicken broth
  • 2 teaspoons basil
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 1 lb grated cheddar cheese
  • 3 cups heavy cream
  • ½ cup sour cream

Instructions

  • Chop onions, celery, and carrots. Chop broccoli and cauliflower into small pieces to make 2 cups each.
  • Brown ground beef in the Instant Pot using Saute button. Drain grease.
  • Brown bacon and drain grease.
  • Put hamburger and bacon into Instant Pot.
  • Add rest of ingredients except for heavy cream, cheese, and sour cream.
  • Stir well.
  • Close lid and valve. Cook on Manual/Pressure
  • Cook, high pressure for 10 minutes. Quick release.
  • Add last three ingredients and cook on saute until warmed through

Meet the Robinsons

My daughter Avery has been learning to vault on horseback.  The horse was not moving at this point and any time that he is moving and he feels like she’s off balance at all, he’ll stop and wait till she’s balanced again.  She’s getting so confident!  It’s been so much fun to watch!
