Steak Fajitas Salad is the best recipe if you are in the mood for some Mexican food, but want a low carb dish! With the delicious, classic flavors of fajitas, we turn this dish low-carb as it transforms into a salad!

Steak Fajitas Salad

This recipe takes a whole new twist on the classic Steak Fajitas and you are going to love every bite of this one! With delicious flank steak, peppers, onions and all the juicy flavorings of a classic Fajitas dish, this recipe is sure to be a hit with everyone at the table every time.

My family loves this recipe and how quick and easy it is to make, too!

Do I have to use Flank Steak for the Beef Fajita Meat?

That’s the type of steak I recommend for the fajitas, but if your store doesn’t have it, you can substitute with another kind of steak like skirt steak.  You just have to be able to slice it in strips and hopefully it won’t have much fat.  If it does, you’ll want to trim that off as well. 

I ended up not able to find Flank Steak on my last grocery run and I used a really thin cut.  It ended up almost too thin, as the meat fell apart really fast, but it was still really tasty!

Can I add some more veggies?

This recipe includes the classic pepper and onions, but if you want more you can add and add them until your heart is content!

What Toppings Do You Recommend for Steak Fajitas Salad?

  • Sour Cream
  • Cheese
  • Tomatoes
  • Onion
  • Pico de Gallo
  • Black Olives
  • Avocado
  • Guacamole
  • Bell Peppers (red pepper or green)
  • Lime Juice
  • Jalapeno Peppers

What kind of salsa is the best?

Really, any kind of delicious salsa will work. I love making homemade salsa and using that. It adds a freshness to the recipe that can’t be beat.

If you want to go with a canned salsa, really anything will do – even a tomatillo base!

Will This Instant Pot Steak Fajitas Salad Work for a Keto Diet?

When I first made this recipe, it was one of the first ones I was doing while on Keto.  Keep in mind, on Keto, you can only have 20 net carbs per day.  If you were to break this recipe up into 8 servings, it would work on Keto, as it only has 6 net carbs.  You would need to be careful about the extra toppings to make sure that they remained in your Keto range.  It’s definitely delicious and something you’ll want to consider if you’re on a keto or low carb diet.  So yummy!  

Can I Make Steak Fajitas Salad for the Slow Cooker, instead?

Yes!  I love making fajitas in the slow cooker, too.  If you do, I would wait until the last hour or two before you add the peppers and onions, otherwise they’ll be super soggy.  You should be able to cook these on low for about 6 hours, or high for 3-4 hours.  Check out my Slow Cooker Chicken Fajitas Recipe for a variation.

Ingredients

  • 2 lbs flank steak
  • 2 bell peppers sliced
  • 1 onion sliced
  • 20 ounces salsa
  • 2 tablespoon fajita seasoning
  • Lettuce
  • Tomatoes
  • Sliced avocado
  • Sour cream

Instructions

  • Slice onion and bell peppers.
  • Slice steak.
  • Add salsa to bottom of the Instant Pot..
  • Add rest of ingredients and stir together.
  • Close lid. Cook on Manual/Pressure Cook, High
  • Pressure for 25 minutes. Natural release. Open
  • Lid.
