Having a nice piece of homemade bread to dip into your soup would be a great idea if your’e not eating low carb, but if you are, you can also have a side salad as a healthy addition.  

How do you store leftovers of this homemade broccoli soup?

If you happen to have any leftover, simply let it cool down completely and then add it to a sealable container. Place the soup inside and put it in the fridge. Now you can relax knowing that you can have homemade soup any time you want over the course of the next few days.

When you’re ready to eat, simply scoop out the soup that you want and place it in the microwave to heat up. It’s as simple as that! 

Can you freeze this Instant Pot Chicken Broccoli Alfredo soup?

Absolutely. If you have too much leftover that you won’t be able to eat it within a few days, store it in a freezer safe container and label it. Then, put it in the freezer for later consumption.

When you’re ready to eat, just pull it out, thaw it and heat it back up! While the texture may have changed a bit, the taste and the flavor will still be the same!

Ingredients

  • 2.5 lbs boneless skinless chicken thighs
  • 2 cups chicken broth
  • 1 cup heavy cream
  • Salt and pepper
  • 1 tablespoon jarred minced garlic
  • 12 oz frozen broccoli florets
  • ¼ cup butter sliced
  • 1 cup shredded Parmesan cheese

Instructions

  • Add chicken, garlic and salt and pepper to Instant Pot. Pour broth in.
  • Cook on Manual/Pressure Cook, High Pressure for 10 minutes. Natural release for 5 minutes, then Quick release.
  • Open Lid Add frozen broccoli and cook on Manual/Pressure Cook, High Pressure for 2 more minutes. (or add cooked broccoli in). Quick Release.
  • Remove chicken and shred with two forks.
  • Carefully stir in heavy cream, butter and Parmesan Cheese and add chicken back in. Serve with Parmesan Cheese.
