Instant Pot Low Carb Chicken Broccoli Alfredo Soup
Ingredients
- 2.5 lbs boneless skinless chicken thighs
- 2 cups chicken broth
- 1 cup heavy cream
- Salt and pepper
- 1 tablespoon jarred minced garlic
- 12 oz frozen broccoli florets
- ¼ cup butter sliced
- 1 cup shredded Parmesan cheese
Instructions
- Add chicken, garlic and salt and pepper to Instant Pot. Pour broth in.
- Cook on Manual/Pressure Cook, High Pressure for 10 minutes. Natural release for 5 minutes, then Quick release.
- Open Lid Add frozen broccoli and cook on Manual/Pressure Cook, High Pressure for 2 more minutes. (or add cooked broccoli in). Quick Release.
- Remove chicken and shred with two forks.
- Carefully stir in heavy cream, butter and Parmesan Cheese and add chicken back in. Serve with Parmesan Cheese.
