CREAMY SLOW COOKER GARLIC CHICKEN & VEGGIES

As the weather cools down and your schedule speeds up, having easy. Delicious, go-to meals is a must. I’m here to help! My Slow Cooker Garlic Chicken & Veggies is a recipe that is budget-friendly, easy to prepare, and one that is sure to please everyone.

 

WHAT CAN I SERVE WITH CREAMY SLOW COOKER GARLIC CHICKEN & VEGGIES?

There’s not much that needs to be added to this amazing dish! Some warm dinner rolls and a quick salad would be the perfect additions.

DO I NEED TO USE WHITE WINE IN THE SAUCE?

The white cooking wine adds a depth of flavor that really adds a lot to this dish, but if you don’t have any on hand or prefer not to use it, you can substitute an equal amount of chicken stock. It will still be delicious!

WILL CREAMY SLOW COOKER GARLIC CHICKEN & VEGGIES FREEZE WELL?

This recipe can be frozen, but due to the dairy, I recommend keeping it in the refrigerator for 3-5 days. However, many of the ingredients can be prepared beforehand and put in a freezer meal pack! This way, you can just take out the prepared ingredients, put them in the slow cooker, and you’re ready to go!

Ingredients

  • 6 boneless skinless chicken thighs
  • 2 lbs red potatoes
  • 2 shallots
  • 1 Tbsp minced garlic
  • 3 cups broccoli florets
  • ¼ cup chicken stock
  • ¼ cup white cooking wine or additional chicken stock
  • ½ cup heavy cream
  • 2 Tbsp butter
  • 1 ½ Tbsp lemon juice
  • 1 Tbsp cornstarch
  • 1 ½ tsp smoked paprika
  • Salt & pepper to taste

Instructions

  • Dice potatoes into 1 in pieces & place in slow cooker
  • Slice 2 shallots
  • Stir in wine, chicken stock, shallots, garlic & thyme, season with salt & pepper
  • Sprinkle chicken with paprika, salt & pepper
  • Place chicken on top
  • Cook on low 5-6 hours
  • Add broccoli, cook 30 min
  • Remove chicken & veggies, keep warm In bowl whisk together cream, lemon juice & cornstarch
  • Stir into slow cooker
  • Cook on high 10-15 min until sauce is thick
  • Serve chicken & veggies with cream sauce

Freezer Bag Instructions:

  • Sprinkle chicken with paprika, salt & pepper
  • Place chicken into gallon size freezer safe bag
  • Label & lay flat to freeze
  • Remove from freezer the night before cooking
  • Dice potatoes into 1 in pieces & place in slow cooker
  • Slice Shallots
  • Stir in wine, chicken stock, shallots, garlic & thyme, season with salt & pepper
  • Place chicken on top
  • Cook on low 5-6 hours
  • Add broccoli, cook 30 min
  • Remove chicken & veggies, keep warm
  • In bowl whisk together cream, lemon juice & cornstarch
  • Stir into slow cooker
  • Cook on high 10-15 min until sauce is thick
  • Serve chicken & veggies with cream sauce

We got to go camping last weekend.  The chilly nights that are coming are perfect for campfires.  Some of the most peaceful times are sitting in front of a fire visiting with friends.  We sure don’t get to do that as often as we’d like!
