When you’re running around all day, there’s nothing like a slow cooker to help make dinner time a little bit easier!! In the summer, it’s even more helpful!

A great thing about this recipe is that it’s not hard at all to make. I love how you can practically throw it all into that magical slow cooker and in a few hours – ta, da – you have a delicious meal waiting for every hungry stomach at the table.

This meal is also super freezer friendly, which is such a plus!!! Going on a trip and need to leave some meals behind? Whip this up and freeze it, and you’ll make everyone happy!

WHAT IS THE IMPORTANCE OF BROWNING THE MEAT FIRST?

It may seem like an unnecessary part of the recipe and sometimes I will skip this step, but many say that it’s very important!  When you brown the meat BEFORE you lock in all the moisture and deliciousness of the meat. If you have some extra time, give it a shot to see what you think.

WHAT TO SERVE WITH SLOW COOKER CHICKEN RECIPES?

This dish is almost perfect on its own, but pairing with a delicious salad and/or some bread on the side is a perfect match!

CAN I ADD DIFFERENT SPICES?

YES!! You don’t have to stick to just these spices. If you are wanting more of a garlicy chicken, you can add in garlic and onion powder and/or minced garlic to your chicken. If you want more of a buttery chicken, you can add in more butter. Just be sure to mix it really well before you start cooking it!

I LIKE LEMONY CHICKEN. CAN I ADD IN LEMONS TO THE POT?

You can, but I would also recommend adding in lemon zest instead of full lemons so it doesn’t taste too acidic.

CAN I USE CHICKEN THIGHS INSTEAD OF CHICKEN BREASTS?

You most definitely can, especially if you like more of a dark meat. You’ll cook it just like you would the chicken breasts!

Ingredients

  • 3 pounds boneless skinless chicken breasts
  • 10 oz bag of baby carrots
  • 2 pounds red potatoes
  • 8 tablespoons butter divided
  • 1 Tsp dried thyme
  • ½ Tsp dried rosemary
  • ¼ Tsp dried oregano
  • ¼ Tsp dried sage
  • ¼ Tsp dried dill
  • ¼ Tsp dried parsley
  • salt & pepper to taste

Instructions

  • Melt butter over medium high heat in a large skillet.
  • Sprinkle chicken with thyme, rosemary, oregano, and sage and a pinch of salt & peppeR.
  • Once butter is melted add chicken breasts seasoned side down.
  • Cook for 4-6 minutes on seasoned side until nicely browned.
  • Place chicken in slow cooker.
  • Put chicken on one side of slow cooker and vegetables on the other side.
  • Melt remaining 4 tablespoons of butter in microwave for about 30 seconds.
  • Stir in dill and parsley.
  •  Pour over veggies in slow cooker, add additional salt and pepper if desired.
  • Cook on high for 3-4 hours or low for 6-8 until chicken is cooked through and veggies are tender

Freezer to Slow Cooker Instructions

  • Melt butter over medium high heat in a large skillet.
  • Sprinkle chicken with thyme, rosemary, oregano, and sage and a pinch of salt & peppeR.
  • Once butter is melted add chicken breasts seasoned side down.
  • Cook for 4-6 minutes on seasoned side until nicely browned.
  • Place all ingredients except potatoes into gallon size freezer safe bag
  • Label and lay flat to freeze.
  • Remove from freezer the night before cooking
  • Place contents of bag into slow cooker.
  • Dice & add potatoes Cook on high for 3-4 hours or low for 6-8 until chicken is cooked through and veggies are tender
