I am a big fan of chicken parmesan!  I don’t know why it never dawned on me to make it in my slow cooker …. until recently, that is.  I think it’s because I felt like it should be fried.  I mean, normally it is, right? Or at least breaded and baked.  Well, this time, I breaded it and I slow cooked it and the chicken had a great texture and taste.  It was so good, everyone kept wanting to go back for seconds, but there weren’t any.  I think I turned away 4 kids, sharing the bad news that mom didn’t make extras this time.  I realized I could have made the whole 3 pound bag for our family of 9 (maybe even a full 6 pounds lol).  It’s OK though.  We didn’t overeat this way!

Ingredients:

1 egg
1 cup Italian bread crumbs
1/2 cup parmesan cheese + more for sprinkling
2-3 pounds of boneless, skinless chicken breasts (enough for your family)
1 Jar of your favorite spaghetti sauce
Cheese (to top with – whatever you keep on hand, normally it’s mozzarella)

 

Directions:

 

I started by cracking an egg into a bowl and mixing it up well.  Next, I mixed a half cup of parmesan cheese with a cup of Italian bread crumbs.  I drizzled a small amount of olive oil in the bottom of the slow cooker and swished it around until it covered the whole bottom of the slow cooker.  Then, I dredged the thawed chicken breast in the egg first, followed by the bread crumb mixture.

Last, I placed the chicken in the bottom of the slow cooker.  I then poured a small amount of spaghetti sauce on each piece of chicken and sprinkled it with parmesan cheese.  (Believe it or not, I usually just use the canned parmesan cheese and not the fresh because I always seem to have it on hand.)

I cooked it on high for 3.5 hours, but you could easily cook it on low for 7-8 hours if you prefer.  When each piece was put on the plate, I put a small amount of Colby-Jack cheese over the top so that it would melt while it was still hot.

We were out of any kind of noodles but Macaroni, so I cooked some up and added the rest of the spaghetti sauce to it, making a nice side dish for the chicken.  Of course, a tossed salad goes nicely with this meal, too.

  • Cook on low for 6-7 hours or high for 3.5 hours.
  • Put a small amount of Colby-Jack cheese over the top so that it will melt while it is still hot.

Freezer to Slow Cooker Instructions:

  • Place the amount of chicken your family needs in a gallon size freezer safe bag.
  • Place the bread crumb mixture into a smaller quart size bag.
  • Staple or tape 2 bags together, label and freeze.
  • On cooking day, thaw meat in microwave (or the night before).
  • Follow instructions in the original recipe above to assemble.

Notes

 
**Please note:  If you are sensitive to textures, you may enjoy this meal more if you go ahead and fry the chicken a little in a skillet first to get the crispy edges.  The breading was slightly mushy in some places.  It's nothing I minded (and my husband who is a lot more sensitive to textures, didn't complain either),  but I wanted to throw that out there for those who are a little more texture sensitive.  Me?  I prefer less steps when it comes to using my slow cooker, so in most cases, when it says to brown my meat first, I just don't (unless it's ground beef).
