SLOW COOKER BEEF AND SWEET POTATO STEW

Beef stew is just one of those classic dishes that everyone loves. Tender pieces of slow-cooked beef, hearty vegetables, and a delicious, savory broth…yum!  What’s even better though…. adding some sweet potatoes to it, for a different kind of twist!

One of the great things about this recipe is that it’s so easy! The slow cooker does all the work for you. It will just simmer away all day long, blending the flavors into a stew that your family will love!

DO I HAVE TO USE SWEET POTATOES?

You don’t have to…but I definitely recommend it! The sweet potatoes add an amazing rich flavor and hearty texture to this beef stew. Once we tried it, we were hooked!

WHAT SHOULD I SERVE WITH SLOW COOKER BEEF AND SWEET POTATO STEW?

This stew is pretty hearty and delicious on its own, so you don’t really have to do much to dress it up. I’d recommend whipping up a quick batch of Southern Cornbread Muffins, though – they go really well with it!

WILL SLOW COOKER BEEF AND SWEET POTATO STEW FREEZE WELL?

I would not recommend freezing this stew, since the sweet potatoes tend to discolor and take on an odd texture. In my experience though, you probably won’t have enough leftovers to freeze – it’s that good! It will keep well in the refrigerator, so any leftovers can be used for lunches or quick meals throughout the week.

Ingredients

  • 2 lbs beef stew meat
  • 2 medium sweet potatoes peeled and cubed
  • 3 stalks of celery sliced
  • 3 medium carrots peeled and sliced
  • 1 medium green pepper diced
  • 1/2 onion chopped
  • 4 cups beef broth
  • 1 tbsp paprika
  • 1 tsp oregano
  • 1 tsp basil
  • 1/2 tsp garlic powder
  • 1 tsp crushed red pepper flakes
  • 1/2 tsp cinnamon
  • 1/2 tsp salt
  • 1/2 tsp pepper

Instructions

  • Add all ingredients to slow cooker.
  • Stir to combine.
  • Cook on low for 8 hours or on high for 4 hours.

Recently, we took our family on a cruise to Cozumel, Mexico and Grand Cayman Islands.  We love to travel and this was our kids’ first cruise.  We actually managed to get a family photo of us all and we were all mostly looking at the camera, lol.  It was a great trip!
