So, how do you feel about French Dip Subs?

What if, I told you that you could have that same great flavor but in a soup?!

This slow cooker french dip soup is AMAZING!  I wasn’t sure how much I’d like it.

It just seemed weird to shred up my roast for a soup.  It almost seemed like a waste of a good roast to me.

But…it was no waste.  The only thing I wish I would have done differently was to double the recipe.

 

My husband isn’t very big about eating leftovers.  But this soup, he was totally OK with eating it over and over again, for days if I had it that long.

Unfortunately for us, it went away fast.  But it will definitely go into a regular rotation of meals.  He’ll want it again and again.  And frankly, so will I!

Slow Cooker French Dip Soup

Start by putting all of your ingredients in the slow cooker, except green beans, noodles and parmesan cheese.

Cook it for 9 hours on low.

Using kitchen shears, cut your meat up into bite sized pieces.

Add green beans.

Add pasta.

Enjoy it!  You deserve it!

Please note:  This recipe calls for cavatappi pasta which is sort of like an elbow noodle, but longer, with a curl.  We ended up using elbow noodles, because our store was out of cavatappi.  Feel free to do the same.

Ingredients

  • 3 lb beef bottom round roast
  • 1 onion
  • 2 cups mushrooms
  • 2 tsp minced garlic
  • 64 oz beef broth
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/2 lb cavatappi pasta
  • 2 15 oz cans green beans
  • Parmesan cheese for garnish

Instructions

  • Slice onions and mushrooms
  • Place roast into slow cooker
  • Add onions, mushrooms, garlic, beef broth, salt & pepper
  • Cook on low 8-9 hours
  • Drain green beans & add to slow cooker
  • Cook pasta according to package directions
  • Shred meat & return to slow cooker
  • Garnish with parmesan cheese
  • Freezer Bag Instructions:
  • Slice onions and mushrooms
  • Place roast, onions, mushrooms, garlic, beef broth, salt & pepper into freezer safe gallon size bag
  • Label & lay flat to freeze
  • Remove from freezer the night before you plan to cook it
  • Place contents of bag into slow cooker
  • Cook on low 9 hours
  • Drain green beans & add to slow cooer
  • Cook pasta according to package directions
  • Shred meat & return to slow cooker
  • Drain pasta & add to slow cooker
  • Garnish with parmesan cheese

    Can you use top round Roast? I can’t find bottom.
