Easy Cucumber Salad Recipe
Ingredients
For salad
- 2 medium cucumbers peeled and sliced evenly
- 1 large roma (plum tomato) seeded and diced
- ½ red onion diced
- ¼ cup marinade/dressing
For marinade/dressing (makes enough to double salad ingredients):
- ¼ cup olive oil
- 3 tablespoons white distilled vinegar
- 1 teaspoon Dijon mustard
- ½ teaspoon onion powder
- ½ teaspoon garlic powder
- ½ teaspoon thyme leaves
- ½ teaspoon dried oregano
- ½ teaspoon dried basil
- ½ teaspoon black pepper
- ½ to 1 teaspoon salt depending on your preference
Instructions
- Add marinade ingredients to quart-size jar. Seal and shake until blended.
- Place all vegetables in a medium bowl. Pour marinade over vegetables and toss to evenly distribute the marinade.
- Cover and refrigerate up to two hours. Remove from refrigerator one hour prior to serving if the oil has congealed to bring it to serving consistency.

My daughter Reagan is growing up! She had a birthday this past month and is already 17 years old. My older girls have made it a bit of a tradition… they have murder mystery parties on their birthdays now. So, for her 17th, she planned a big party with 15 of her friends. I was the host (basically this means I answer all of their questions) and they dress up as their assigned part and try to figure out who the murderer was. It’s always a lot of fun!
She was a rich old lady. She didn’t want to make herself look too old though because she loves getting dressed up, lol….. so she put on some glasses, a scarf and used a walker for part of the time. It was a lot of fun for all!
