Easy Cucumber Salad Recipe

There’s just something so “summer” about this simple cucumber salad recipe. It not only tastes refreshing but somehow, every single bite just gets better and better. While it’s 100% okay to create this recipe just for yourself, everyone will love you even more if you make and share it with them! 

Whipping up this salad for a family get together or BBQ is seriously just that simple. Who knew that you could bring a stellar side dish without having to stress and be in the kitchen for hours on end? 

Can you make this easy cucumber salad recipe spicy?

Absolutely! If you like to add a bit of spice to your food, go for it! I always recommend doing this individually to your own bowl so that others who don’t like it spicy don’t have to worry about it. Simply add in some chili flakes and you’ll get that heat that you seek! 

 

Can you freeze this easy cucumber salad recipe?

No, I would say, never freeze a cucumber if you want it to have the fresh crunch that you’re used to having.  They will thaw and your cucumbers will be mushy and not have that same texture and consistency as fresh.

Since I don’t recommend freezing it, know that this recipe can be saved in the fridge for several days after it’s made! In fact, the longer that it marinates, the better the flavor becomes.

Ingredients

For salad

  • 2 medium cucumbers peeled and sliced evenly
  • 1 large roma (plum tomato) seeded and diced
  • ½ red onion diced
  • ¼ cup marinade/dressing

For marinade/dressing (makes enough to double salad ingredients):

  • ¼ cup olive oil
  • 3 tablespoons white distilled vinegar
  • 1 teaspoon Dijon mustard
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • ½ teaspoon thyme leaves
  • ½ teaspoon dried oregano
  • ½ teaspoon dried basil
  • ½ teaspoon black pepper
  • ½ to 1 teaspoon salt depending on your preference

Instructions

  • Add marinade ingredients to quart-size jar. Seal and shake until blended.
  • Place all vegetables in a medium bowl. Pour marinade over vegetables and toss to evenly distribute the marinade.
  • Cover and refrigerate up to two hours. Remove from refrigerator one hour prior to serving if the oil has congealed to bring it to serving consistency.

Meet The Robinsons…..

My daughter Reagan is growing up!  She had a birthday this past month and is already 17 years old.  My older girls have made it a bit of a tradition… they have murder mystery parties on their birthdays now.  So, for her 17th, she planned a big party with 15 of her friends.  I was the host (basically this means I answer all of their questions) and they dress up as their assigned part and try to figure out who the murderer was.  It’s always a lot of fun!  

She was a rich old lady.  She didn’t want to make herself look too old though because she loves getting dressed up, lol….. so she put on some glasses, a scarf and used a walker for part of the time.  It was a lot of fun for all!
