 Easy Blueberry Muffins Recipe Using Fresh Blueberries

If you love fresh fruits and muffins, this recipe is for you! With all of the delicious bursts of flavor that come with fresh blueberries, these muffins definitely hit the spot.

My entire family loves these muffins. Whether for breakfast, a snack or a dessert after dinner – you can never go wrong with them!  In fact, they’re kind of special for me, in that they remind me of my grandparents.  All of my childhood, my grandparents were known for their blueberry bushes.  They just had 3 in their back yard, but they harvested those blueberries off of them so well.  We’d go and visit my grandparents for 2 weeks every summer and we’d get to pick them and eat them any time we wanted.  And when we weren’t visiting, my grandparents would send us bags of them home so that we could enjoy them at home, in our pancakes, in these muffins or as yummy snacks.  

Do I have to use fresh blueberries?

No, you can use fresh or frozen blueberries.  We have often picked and frozen our blueberries.  Since they will be cooked anyway, the freezer won’t alter them enough to where you shouldn’t use them in these muffins.  

Can these muffins be frozen?

Yes! Wrap them tight in the plastic wrap or cellophane and they should last a few months in the freezer. When thawing, transfer them from the freezer to the fridge first, to avoid any excess moisture collecting and making them soggy.

Are these better for breakfast or dessert?

Honestly, mix it up! They work great as a snack for the kids after school, a hearty on-the-go breakfast, or a delicious dessert after a hearty dinner!  Honestly, we like to eat them any time.  They’re so amazing!

Ingredients

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • ½ cup butter room temperature
  • ¾ cup sugar
  • 2 large eggs room temperature
  • 1 teaspoon vanilla
  • ½ cup buttermilk
  • 2 1/2 cups fresh blueberries

Instructions

  • Preheat oven to 425 degrees. Line a 12 cup muffin pan with standard muffin cups and lightly spray with non-stick cooking spray.
  • In a medium size bowl, whisk together flour, baking powder, and salt. Set aside.
  • In a large mixing bowl or stand mixer, cream the butter and sugar until light and fluffy, beating for about 2 minutes.
  • To the butter, add the eggs one at a time and beat until blended. Add vanilla.
  • Add flour mixture in ½ cup increments alternating with the buttermilk. Mix only until just combined.
  • Gently fold in fruit.
  • Divide batter evenly among the muffin cups.
  • Bake at 425 degrees for 5 minutes. Lower the oven temperature to 375 degrees and bake for an additional 12 to 15 minutes or until a toothpick inserted comes out with moist crumbs.

My 5 girls and I recently went to a Mother’s Day outing at our church.  I had just started my keto diet…lol.. and it was all desserts all evening.  My 10 year old was a little distraught that I wasn’t going to be eating the yummy goodness with them, so I decided to have a cheat night and indulge.  It was so worth it!  🙂 I think these blueberry muffins may be worth an occasional Keto Cheat night, too.  LOL.  

Here we are, at the end of the social.  We had a great time!
