Slow Cooker Breakfast Tater Tot Casserole

I’ve been working on preparing our household for Back to School season and making sure that I get my kids to bed at a decent hour so that they can get up for school and ready for lots of learning.  Because of this,  I’ve been thinking about what foods that I can make for breakfast that are full of protein, but something that doesn’t take a lot of effort.  I am NOT a morning person, so the less I can do in the morning, the better!

I recently heard about a study that said that kids who eat a wholesome breakfast, especially one with plenty of protein, are more likely to stay in school and perform better on standardized tests.  To me, that is all the more reason to make time for a good protein-packed breakfast like this Slow Cooker Breakfast Tater Tot Casserole!

 

Can Slow Cooker Breakfast Tater Tot Casserole Cook Overnight?

Yes!  That is the beauty of making breakfast casseroles in your slow cooker.  You can put it in the night before and let it cook on low for 6-7 hours.  If you plan to sleep longer than that, be sure to use a digital slow cooker that changes over to Keep Warm, so that it will stay warm until morning.

 

 

 

Is this Slow Cooker Breakfast Tater Tot Casserole Difficult to Make?

This recipe is VERY simple.  It calls for easy ingredients, like Smithfield Anytime Favorites Diced Ham, Tater Tots, eggs, milk and spices.  I did dice half of an onion and put that in as well, but if you don’t like onions or don’t want to take the time, you can always leave it out.  It’s so easy, next time we make it, I’m going to assign one of my kids to put it in the slow cooker before bed!

We LOVED how convenient the Smithfield Anytime Favorites Diced Ham was to use!  It comes in many different varieties, depending on your needs.  We used the diced variety, because it was going into a casserole and I didn’t want to chop anything, but you can also get cubed or sliced, depending on what recipe you are wanting to use it for.  If you want to try some, you can find it at your local grocery store.

 

Should the Tater Tots be Frozen or Thawed in this Slow Cooker Breakfast Tater Tot Casserole?

Frozen.  I’ve found that when they start to thaw, they start to fall apart.  Keep them intact and put them in frozen when you start this meal.

Ingredients

  • 32  oz  bag frozen tater tots
  • 8 oz Smithfield Anytime Favorites Diced Ham
  • 12  large eggs
  • 1/2  cup  milk
  • 1/2 onion
  • 1  teaspoon  garlic powder
  • ¼  teaspoon  salt
  • ⅛  teaspoon  pepper
  • 3  cups  shredded Cheddar and Monterey Jack cheese
  • Dried parsley for garnish.

Instructions

  • Dice onion
  • Add 2/3 of the bag of tater tots to the bottom of the slow cooker.
  • Scatter onion over the top of the tater tots.
  • Whisk together eggs, milk, garlic powder, salt and pepper.
  • Pour over the tater tots.
  • Add 1 1/2 cups of cheese
  • Sprinkle Smithfield Anytime Favorites Diced Ham over the top of the cheese.
  • Top it off with the remaining 1.5 cups of cheese and tater tots.
  • Replace lid on the slow cooker and cook on low for 6 hours or on high for 2-3 hours.
