In the past, I would never cook anything that even came close to resembling Asian food, because my husband claimed he didn’t like it. But, I started to notice that he’d go to Walmart and buy a bucket of chicken, when he was in a time pinch. In that bucket, he’d pick out General Tso’s Chicken, as one of his favorites! I was a little floored! “Hey”, I said, “I thought you didn’t like Asian style food”?
He was just as surprised as me, because he had no clue it was Asian. And while I realize, a bucket of chicken from Walmart, hardly constitutes true, authentic Asian food that you actually find in Asian countries, to me it was a good start. One where I could start experimenting on his tastes a little. After all, he was the only one in our family who refused to eat it. Partly because of a bad experience at a Chinese restaurant he bussed tables at when he was 14 years old.
One day, I decided I’d really like to try something different and I had run across a new recipe that I wanted to play around with. He liked it! So then, I decide to keep experimenting. I tried the Hawaiian Chicken and he REALLY liked it, claiming it was one of his favorites! Then finally, on to the meatballs.
Guess what?
He refused to even try them. LOL. Apparently he wasn’t in the mood to try a new food that night, especially since he doesn’t like Asian food. But that’s OK, because all of my kids were happy to eat his share.
These Asian Meatballs are wonderful served over rice (unless you have a true aversion to Asian food). If you’d like them a little saucier, you can double the amount of sauce you cook them in, so you have plenty to stir into your rice. They are simple, because you just use frozen, bagged meatballs. You can get a little more adventurous though and make your own meatballs if you like . It all depends on how quickly you need to stick this meal into the slow cooker. For me, the faster the better! They’re also perfect to serve on toothpicks at parties.
