Slow Cooker Easy Rice Pudding Recipe – The Perfect Comfort Food

Cold weather is the perfect time to have comfort food, don’t you think?  Growing up, I remember wanting a late night snack on a cold winter day and my mom would let me have something we called Rice, Cream & Sugar.  It was exactly what it sounds like.  Leftover white rice from our family meal that day, a little bit of milk and enough sugar to make it sweet.  That’s not exactly the Rice Pudding Recipe, I’m going to share…but… it was always special to me.

Since that time, I always find myself setting aside a little rice when I’ve cooked it for one of our suppers, so that I can have that treat late at night.  My kids always think I’m weird, and maybe they’re right, lol.  But, I kind of like going back to that place from my childhood.

Since my kids turned their nose up to my childhood comfort food, I decided to put together a recipe that they CAN get excited about.  I wanted them to find the joy that I’ve always had around this comfort food, but figured I just hadn’t shared the right recipe yet.  It was time for them to experience their new favorite rice pudding recipe.

Most of my family of 9 had never had rice pudding, but some had tried the store bought kind that isn’t nearly as good, so they weren’t sure what to think.  They never realized how good rice pudding could be, until their first taste that night.

I’l have to admit, this recipe KILLS my rice, cream and sugar tide-me-over.  I mean, totally knocks it out of the water.  Of course, it also gets nice and thick, has added vanilla, cinnamon and butter and is just plain AMAZING, so what would I expect?

Needless to say, I had several kids going to bed that night with happy tummies, full of this Easy Rice Pudding Recipe.  It’s so simple, you should give it a try soon, too!  Grab yourself a box of Minute® White Rice from the store the next time you go, so you’ll always have the option to make this super-quick-to-prepare dessert!  (Seriously, you can can put it together in just 5 minutes!)

 

An Easy Rice Pudding Recipe, Made in the Slow Cooker

Ingredients:

3 cups Minute® White Rice
9 cups whole milk
1 1/4 cup sugar
1/2 tsp salt
1 tsp cinnamon
1/2 tsp vanilla
3 tbsp brown sugar
4 tbsp butter (1/2 stick, cut into small slices)

Directions:

  1. Place Minute® White Rice, milk, sugar, salt, cinnamon, vanilla and brown sugar into slow cooker and whisk. rice-pudding-pour-milk
  2. Cut the 1/2 stick of butter into small slices (or pats) of butter and evenly place it around the top of the pudding mixture.
  3. Cook on low for 3-4 hours or on high for 2 hours.  before-cooked
  4. This will not thicken until it cools, so if you want to serve it thick, you’ll want to let it cool for at least 30 minutes.
  5. Serve in bowls and sprinkle with a little extra cinnamon.

    Oh this sounds so comforting and yummy. Thank you for the recipe! My childhood snack was rice with sugar and butter. I even ate it for breakfast sometimes. And now when we have rice with our dinner I like to fix it as my dessert.
