Are you ready for some healthy crock pot recipes? I know I am! I’ve been needing to make this list for a long time, but I finally have the push that I need.
After spending an evening in the ER a couple of weeks ago, I’m trying once again to reach back out to that healthy eating that I once was so good at doing. I had gone to the doctor because my blood pressure was super high and they were trying to figure out exactly what was causing that. After they couldn’t get my numbers to come down with a pill, they sent me to the ER. It turned out that I was having pain in my gall bladder (which I knew was there, but it wasn’t THAT significant) and that pain was raising my blood pressure to ridiculous heights. (I’m talking 220/118 when my normal is 120/70)
Since that time, I’ve been acutely aware of that tender spot right under my breast bone. I’ve found that the way I feel depends on how I’m eating. If I drink soda, it hurts worse. Some days it hurts worse for other weird reasons, but soda has been the biggest culprit I’ve found so far. I’ve also found that if I eat more fruits and vegetables, I typically feel better. Obviously, in order to lose weight, I’m supposed to be drinking less soda and eating more fruits and veggies, so I guess this new little gall bladder diet may actually help me out.
As I started thinking through my next meal plan, I realized that I don’t really have any of my meals categorized in any healthy eating category, but I really do have healthy meals here on my site. I figured I’d better start a list of healthy crock pot recipes.
What Makes a Healthy Crockpot Recipe?
First off, let’s talk about what makes a healthy meal, as I know that each person can interpret that very differently! For me, healthy eating means, low carb, no sugar, heavy on the vegetables, and lean meat. I also allow myself fruit, but in moderation as it can be turned to fat if I have too much. The meals I pick may be a little meat heavy, but when I pick a meal like that, I will add a whole lot of vegetables as sides.
Most of these recipes will qualify as low carb and work well when I’m using the South Beach diet. Sometimes you’ll have to make a modification, but I will try to share about the modifications you should make below.

Here’s Your 10 Healthy Crock Pot Recipes {Freezer to Slow Cooker Version}
Slow Cooker Stuffed Peppers
To eliminate carbs, you could substitute grated cauliflower or carrots for the brown rice.
Lemon Pepper Turkey Breast
Lemon pepper has been known to have sugar in it. To get around the sugar content, you’ll want to make your own, or check any labels of lemon pepper. Instead, for every 1 teaspoon of lemon pepper, substitute 1/2 teaspoon of lemon zest + 1/8 tsp fine ground pepper + 1/4 tsp salt.
Creamy Chicken & Kale Soup
I could eat this soup every day. It’s so good and so good for you. Look at all that fresh, green kale. So much goodness packed in one soup!
Sausage, Egg & Broccoli Breakfast Casserole
The great thing about this breakfast casserole is that it doesn’t have any flour in it. That means my carbs can stay down, while I still get some great veggies in. If you use sausage, be sure to drain and rinse the meat, to cut down on any fat consumption from leftover grease. Or, you can cut it out or substitute it with another lower fat meat.
Pork Adobo
The adobo sauce in this recipe may have some sugar in it. You may want to doublecheck your can to be sure. For me, such a minimal amount of sauce is used, that I don’t think it will negatively impact my weight loss should I have this meal. Instead of serving it on tortillas, try serving it over salad, instead.
Steak Fajitas
Once again, serve these over lettuce or in lettuce wraps to reduce the carbs. This meal was fabulous!
Slow Cooker Vegetable Beef Soup
If you are low carbing it, you may want to replace the mixed vegetables with something that does not have corn in it.
French Stew
You will want to leave out the brown sugar in this recipe to keep it as healthful as possible. It will be good anyway, don’t you worry a thing about that! This is one of my husband’s absolute favorite recipes!
Cabbage Rolls
This was a new recipe that we tried just recently. It was well worth the time it took to roll the cabbage up. For a healthy recipe, this one was the BOMB! Be sure to use low fat percentage ground beef.
Slow Cooker Chicken Fajita Soup
Soups are great ways to keep your carbs down and get full quickly. This one is chock full of peppers and onions, making it very tasty!
The above slow cooker recipes are amazing! Now you have no excuse. Let’s both get off of our butts, plan some healthy meals and start exercising again!
