Turkey Guacamole Sandwiches or Low Carb Wraps

Have I ever told you how busy I am?

Yeah, I thought so.

I’m so busy that I only cook one meal a day.

I refuse to cook breakfast and I refuse to cook lunch.

Why?

I really don’t enjoy spending much time in the kitchen.  There’s so many better ways I can think of to spend my time.  Cooking a slow cooker meal at dinner time is about the extent of my actual cooking something hot these days.

For lunch, instead of having a hot meal, we love to keep easy fixings like cold cuts and fruit around.

When we are following our homeschool schedule, we start our lunch break about noon.  Sometimes though, the kids stagger in at different times because they were slow to get their math or writing done.  Pulling out some Hillshire Farms® Turkey Breast that I bought at Walmart is the perfect lunch for us!

We can eat it whenever it works with our schedule and we can even pack a quick lunch, if we’re going to be out of the house for the day.  My husband loves it when I pack him a lunch, too.  He thinks I’m spoiling him.  

Our whole family is trying to change the way we eat by eating more vegetables.  Each of us chose to have our turkey in different ways.  My daughter had hers on a sandwich loaded with vegetables:

On it, she put:

  1.  Hillshire Farms® Turkey Breast Lunch Meat
  2. Lettuce
  3. Tomatoes
  4. Onions
  5. Cucumbers
  6. Guacamole
  7. Caesar Dressing
  8. Cheddar Cheese

It was one fat sandwich, but she said it was AMAZING!  It looks pretty amazing, too!

But me, since I’m trying to go low carb, I bought a low carb tortilla to put it on.

It was delicious too!

On mine, I had:

  1. Lettuce
  2. Tomato
  3. Onion
  4. Avocado
  5. Caesar Dressing
  6. Hillshire Farms® Turkey Breast Lunch Meat

I’m not a fan of cucumbers, so I left that for the rest of the family.

The taste of the meat was perfect along with all of those vegetables.   My kids loved it, too!

 

After we gobbled up all of the lunch meat, I used my new container to store the rest of our baby carrots.  I love how these Hillshire Farms® lunch meat containers can be reused!
