You know how I love finding slow cooker recipes to make with ground beef? Well, this one was a really big hit in our house. I think, just because it’s simple and it has regular ingredients. Nobody has to wonder what that piece of anything is. And, we know it’s all family favorites like ground beef, potatoes, corn, etc.
Serve this dish with some cornbread and it’ll make the meal complete!
I had a crazy week, this week, so I had a friend of mine quickly put it together for me, when she was helping at my house this week. She had it in the slow cooker, in no time at all. It felt like I was being totally spoiled, not having to work on dinner that day.
Slow Cooker Cowboy Supper
Ingredients
- 2 lbs ground beef
- 5 potatoes
- 1 onion
- 3 tsp minced garlic
- Salt & pepper to taste
- 1 15 oz can chili beans
- 1 15 oz can diced tomatoes
- 1 15 oz can corn
- 1 ⁄4 cup water
- 8 oz shredded cheddar cheese
Instructions
- Brown ground beef, drain
- While beef is cooking; dice 5 potatoes and 1 onion
- Place potatoes, salt & pepper into slow cooker
- Add ground beef, onions & garlic
- Add tomatoes, chili beans, corn & water
- Cover & cook on low 6-8 hours
- Add shredded cheese, cook 15 min
- Freezer Bag Instructions:
- Brown ground beef, drain
- While beef is cooking, dice 1 onion
- Place all ingredients except potatoes into gallon size freezer safe bag
- Label & lay bag flat to freeze
- Remove from freezer the night before you plan to use it
- Place contents of bag into slow cooker
- Dice 5 potatoes and add to slow cooker
- Cook on low 6-8 hours
- Add shredded cheese, cook 15 min
