Round Steak & Veggies in the Slow Cooker (Low Carb Version, too!)

We have been looking for some different things to cook in the slow cooker.  I love any meats that are cooked in a tomato sauce of some kind.  Whether it has diced tomatoes, tomato soup or just plain tomato sauce, it is usually a good choice!  The sauce cooks into the meat nicely!

 

Originally, I was going to call this a casserole, but when I saw it, it really didn’t seem like a casserole at all.  It was more like a steak and potatoes type of meal.  I don’t know about your husband, but mine prefers steak and potatoes over casseroles.  Casseroles are thick.  This was a little more soupy (because I didn’t leave off the lid the last hour of the cooking time).  It was delicious though.  My husband was happily returning for seconds.  The only drawback was the price of the meat.  Round Steak was $4.99 per pound in our town.  Ouch.  If you happen to have venison, this would be the perfect recipe for your venison steaks!  I think I still have a few in my freezer and I’m going to make it again with them.

Round Steak Veggies Recipe

Sometimes, when I’m in a hurry, the photo doesn’t come out as well as it does other times.  This is one of those times.  Plus, I wanted to point out, this photo is the high carb version, as noted by the white potatoes.  When I make it again, hopefully I’ll get a better photo and can update this post.  It really does taste great!  Kind of like a beef stew or a pot roast, with a twist.  

 

Round Steak & Veggies Recipe

Serves 6 adults

 

Ingredients:

2-3 pounds of round steak, cut 1/2″ thick
salt
pepper
2 onions, sliced thin
5-6 potatoes cut in slices  (leave out or use brown rice if doing THM or low carb)
15 oz can of green beans
1 tsp garlic powder
10 3/4 oz can of tomato soup (sub tomato sauce if doing THM or low carb)
14.5 oz can diced tomatoes

Directions:

  1. Season meat with salt and pepper.
  2. Place in the bottom of the slow cooker.
  3. Add onions, potatoes, green beans and garlic powder.
  4. Top with soup and tomatoes
  5. Cook on low for 8 hours or on high for 4-5 hours.
  6. If there’s too much liquid toward the last half of the cooking time, remove the lid for about an hour.

 

Freezer to Slow Cooker Instructions:

  • Season meat with salt and pepper
  • Place seasoned meat and the rest of the ingredients in a freezer safe bag.
  • Squish bag so that all ingredients are nicely coated with the tomato mixture.
  • Label Bag.  Lay flat to Freeze.

 

Variation Ideas:  Add carrots or other vegetables to the mixture.  Any veggies would be good in this!

 

If you are on a low carb diet or using the Trim Healthy Mama (THM) way of eating, you will want to leave out the potatoes, pick out the potatoes or replace them with 1/2 cup of brown rice per serving.  You will also want to switch the Tomato Soup to tomato sauce, so that you don’t have any sugar in the recipe.  I’m new to THM and if I figured it correctly, with the brown rice and tomato soup, this would be considered an E meal.  Someone correct me if I’m wrong.
