Who has never eaten green eggs and ham?  You’ve surely read the Dr. Seuss book though, right?  I was reading about how Read Across America Day is March 1st and Dr. Seuss’s birthday is March 2nd, so why not make green eggs and ham in honor of that?  Right?  Of course, if you need another reason to eat green eggs, you could always say, it’s almost Saint Patrick’s Day, so why not do it for that reason?  Or of course for the sheer entertainment of your family, that’ll work, too.

Regardless, your kids (and your hubby) will likely think that you’re either off your rocker OR that this is a fun adventure.  My kids had mixed reactions.  The one that hates vegetables was sure that I had turned these eggs into vegetables and WAS NOT impressed.  The others….lets just say they scarfed them down pretty quickly!

Do you know how to make green eggs and ham?  What makes these green eggs so green if you’re not using food coloring, you ask.  Spinach.  I blended eggs with fresh (but frozen) spinach.  We like spinach quiche, so I figured if I wanted these to look a little more green, I’d have to get the blender out and start blending it all together.  It worked pretty well.  In fact, the longer it cooked, the greener it got.  [If you happen to dislike spinach, let me encourage you, that you cannot taste the spinach.  Even less so after it is all blended, than if you had’ve left it in larger pieces]

This quiche recipe is incredibly versatile.  You can use pretty much any meat and any vegetable that you want in it.  I will share with you exactly what we used, and then I will share other ideas you could put in, instead. Ingredients

2 cups grated cheese
2/3 cup of flour
1 Large Onion, diced
3 handfulls of fresh spinach
8 Eggs
2 cups of Milk
1.5 pounds of chopped ham
1 teaspoon garlic powder 
1 teaspoon salt
1/2 teaspoon pepper

Directions:

  1. Preheat oven to 450 degrees
  2. Place eggs and spinach into the blender.
  3. Blend well until mixture is nice and green.  If you feel you need it a darker color, feel free to add more spinach.
  4. Dice onion and sauté in oil or butter on stove top.
  5. Dice Ham (We also cook up some of ours, so that it’s browned)
  6. Pour milk and flour into blender, along with spices.
  7. Blend until mix is nice and smooth.
  8. Grease (or spray) 9×13 pan.
  9. Mix together egg mixture, meat, onions & cheese.
  10. Pour into 9×13 pan.
  11. Bake at 450 for 30 to 35 minutes
