I know you’re all super busy, getting ready for Christmas that seems to have just sneaked up on us, aren’t you? I know, I am too, so I’m going to keep this short.
We are hosting Christmas Eve with my husband’s side of the family. We typically don’t like to keep things too traditional for this get together and I prefer to keep it easy, because that’s how I am. We are going to have Mexican food.
On our menu is:
Montereys
I’m going to make up the meat mixture in the morning and then put it in the slow cooker to keep it warm. We will then top them with lettuce, tomato, onions, jalapeños, cheese, sour cream and guacamole.
Chili Con Queso
We love this cheese dip! We will put it on our montereys or we will have them over chips. I will be providing both options.
Guacamole
Not everyone coming likes guacamole, but to me, Mexican food tastes so much better when you’ve got fresh guacamole. Of course, this also depends on if I can find some not too ripe avocados at the store. That can be a real challenge in our town!
Dessert: Pumpkin Pie Cake
For dessert, my mother in law said she’s bringing a bunch of it, but if we still have time, after we clean and rearrange our furniture, we love having pumpkin pie cake. It is definitely a family favorite around Christmas time!
Now, all I have to do is figure out what we’re eating for Christmas. I better hurry though….gotta go to the store tonight! In the mean time, I’m going to be cleaning and rearranging furniture….. Merry Christmas!
