These slow cooker sweet potatoes with marshmallow are the perfect side for your Thanksgiving dinner!  OF course, I like to eat sweet potatoes all the time, so they'll be perfect any time you want them!

Ingredients

  • 4-5 lb. sweet potatoes
  • 1 bag of mini marshmallows
  • 1 1/2 cups water
  • 1/4 cup butter
  • 1/2 cup heavy cream
  • 3/4 cup brown sugar
  • 1 tsp vanilla
  • 1/4 tsp nutmeg
  • 1/4 tsp allspice
  • 1 tsp cinnamon

Instructions

  • Peel & chop sweet potatoes and toss them into the crockpot.
  • Add 1 1/2 cups water.
  • Cook on low 6-7 hours or high 3-4 hours.
  • Drain the potatoes and return to the crockpot.
  • Mash, and stir in remaining ingredients, minus marshmallows.
  • Smooth the top of the potatoes and layer on bag of mini marshmallows.
  • Cook 10-15 minutes more on high until marshmallows are melted.
