This Italian Beef Soup Recipe is definitely a delicious soup for me.  It's even one I could lose weight on if I wanted to!

Ingredients

  • 2 lbs stew meat
  • 1 onion
  • 1 cup carrots
  • 1 tsp oregano
  • 30 oz beef broth
  • 2 14.5 oz cans Italian Diced tomatoes
  • 2 15 oz cans Great northern Beans drain
  • 2 tsp onion powder
  • Salt & pepper to taste
  • Shredded Parmesan cheese for garnish

Instructions

  • Dice 1 onion, 1 cup carrots and  drain beans
  • Cut stew meat into 1 inch pieces
  • Place all ingredients in slow cooker, except Parmesan cheese
  • Cook on low 8-9 hours
  • Garnish with Parmesan cheese

Freezer Bag Instructions:

  • Dice 1 onion, 1 cup carrots & drain beans
  • Cut stew meat into 1 inch pieces
  • Place all ingredients except parmesan cheese into gallon size, freezer safe bag
  • Label & lay bag flat in freezer
  • Get bag out of freezer the night before you plan to cook it
  • Place contents of bag into slow cooker
  • Cook on low 8-9 hours
  • Garnish with Parmesan cheese
