Healthy Southwestern Chicken Tortilla Soup

Ingredients

  • 1 lb chicken breast
  • 1 1/2 cup chicken broth
  • 1/2 cup salsa
  • 1 cup greek yogurt
  • 1 can 15 ounces black beans (rinsed and drained)
  • 1 can 15 ounces diced tomatoes (I prefer no salt added & petite diced)
  • 1 1/2 cup corn frozen, fresh or canned is fine
  • of canned drain first
  • 1 clove or 1/2 tsp minced garlic
  • 2-3 tbsp taco seasoning I make my own from this recipe or you can buy the packets
  • 1 tsp cumin
  • Tortilla strips & shredded cheese for topping

Instructions

  • Gather all ingredients
  • Drain and rinse black beans
  • Put all ingredients into crock pot
  • Cook on high for 3-4 hours until chicken is cooked
  • Take chicken out of crockpot and shred into bite sized pieces.
  • Return to pot, and cook for another hour.
  • Serve with tortilla strips on top & cheese if desired!
