Low Carb Instant Pot Cheeseburger Soup
If you love the classic Instant Pot Cheeseburger soup, but DON'T love the carbs that go along with it, this Low Carb Instant Pot Cheeseburger Soup will be your absolutely new favorite!
- 2 lbs lean ground beef
- 1 lb bacon
- 4 stalks of celery
- 2 onions
- 1 carrot
- 1 head of broccoli
- 1 head of cauliflower
- 6 cups chicken broth
- 2 teaspoons basil
- ½ teaspoon salt
- ½ teaspoon pepper
- 1 lb grated cheddar cheese
- 3 cups heavy cream
- ½ cup sour cream
Chop onions, celery, and carrots. Chop broccoli and cauliflower into small pieces to make 2 cups each.
Brown ground beef in the Instant Pot using Saute button. Drain grease.
Brown bacon and drain grease.
Put hamburger and bacon into Instant Pot.
Add rest of ingredients except for heavy cream, cheese, and sour cream.
Close lid and valve. Cook on Manual/Pressure
Cook, high pressure for 10 minutes. Quick release.
Add last three ingredients and cook on saute until warmed through
