Instant Pot Low Carb Chicken Broccoli Alfredo Soup
This Instant Pot Low Carb Chicken Broccoli Alfredo Soup is hearty and full of delicious ingredients. One spoonful and you'll never make your soup any other way.
- 2.5 lbs boneless skinless chicken thighs
- 2 cups chicken broth
- 1 cup heavy cream
- Salt and pepper
- 1 tablespoon jarred minced garlic
- 12 oz frozen broccoli florets
- ¼ cup butter sliced
- 1 cup shredded Parmesan cheese
Add chicken, garlic and salt and pepper to Instant Pot. Pour broth in.
Cook on Manual/Pressure Cook, High Pressure for 10 minutes. Natural release for 5 minutes, then Quick release.
Open Lid Add frozen broccoli and cook on Manual/Pressure Cook, High Pressure for 2 more minutes. (or add cooked broccoli in). Quick Release.
Remove chicken and shred with two forks.
Carefully stir in heavy cream, butter and Parmesan Cheese and add chicken back in. Serve with Parmesan Cheese.
