Easy Cucumber Salad Recipe
This Easy Cucumber Salad recipe is perfect for summer snacking. Pair it up with your favorite grilling item or enjoy it on its own!
- 2 medium cucumbers peeled and sliced evenly
- 1 large roma (plum tomato) seeded and diced
- ½ red onion diced
- ¼ cup marinade/dressing
For marinade/dressing (makes enough to double salad ingredients):
- ¼ cup olive oil
- 3 tablespoons white distilled vinegar
- 1 teaspoon Dijon mustard
- ½ teaspoon onion powder
- ½ teaspoon garlic powder
- ½ teaspoon thyme leaves
- ½ teaspoon dried oregano
- ½ teaspoon dried basil
- ½ teaspoon black pepper
- ½ to 1 teaspoon salt depending on your preference
Add marinade ingredients to quart-size jar. Seal and shake until blended.
Place all vegetables in a medium bowl. Pour marinade over vegetables and toss to evenly distribute the marinade.
Cover and refrigerate up to two hours. Remove from refrigerator one hour prior to serving if the oil has congealed to bring it to serving consistency.
