Ingredients

  • 1 pound cooked ground beef
  • 1/2 large red onion chopped
  • 1 cup carrots chopped
  • 2 cans 14.5 oz diced tomatoes
  • 1 can kidney beans drained and rinsed
  • 1 can white beans drained and rinsed
  • 3 cups  beef broth
  • 1 jar 24 oz pasta sauce
  • 2 tsp oregano
  • 1 Tabasco sauce
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup  dry pasta (orzo, macaroni, something small)

Instructions

  • Brown ground beef in "Instant Pot", on Saute function, until meat is no longer pink. Drain grease.
  • Chop onion.
  • Peel and chop carrots (I used 2)
  • Add all ingredients to Instant Pot.
  • Close lid and vent.
  • Cook on Manual or Pressure Cook, high pressure, 4 minutes.
  • Quick Release the pressure.
  • Top with mozzarella cheese and serve in individual bowls.
  • For more spice, add more Tabasco sauce to individual bowls.
