- 2 medium yellow onions peeled and cut into large chunks
- 4 cloves of garlic peeled and ends chopped
- 2 tbsp olive oil
- 2 28 oz cans diced tomatoes with liquid
- 3 tbsp basil
- 1.5 oz fresh basil chopped
- 1 cup chicken broth
- 2/3 cup heavy cream
- salt & pepper to taste
Place the chopping blade in the work bowl.
Chop the onion and garlic in the work bowl on speed 6 for 10 seconds. Scrape down the sides of the bowl with the scraper.
Add olive oil. Cook at 212˚ F on speed 2 for 8 minutes, with the measuring cap removed from the lid.
Add tomatoes. Replace the measuring cap and cook at 195˚ F on speed 2 for 20 minutes. Add basil, broth and heavy cream. Remove measuring cap and let cool for 10 minutes.
Replace the measuring cap in the lid. Process at speed 7 for 1 minute. Season with salt and pepper.
