Slow Cooker Cowboy Supper

Don't let the name Cowboy Supper scare you off.  It's a great dish, made with many American favorites, like corn, ground beef, potatoes, and beans.  Mix 'em all together and you've got a great dish.  Serve it with some cornbread and you'll feel you stopped by grandma's house for a delicious supper!

Ingredients

  • 2 lbs ground beef
  • 5 potatoes
  • 1 onion
  • 3 tsp minced garlic
  • Salt & pepper to taste
  • 1 15 oz can chili beans
  • 1 15 oz can diced tomatoes
  • 1 15 oz can corn
  • 1 ⁄4 cup water
  • 8 oz shredded cheddar cheese

Instructions

  • Brown ground beef, drain
  • While beef is cooking; dice 5 potatoes and 1 onion
  • Place potatoes, salt & pepper into slow cooker
  • Add ground beef, onions & garlic
  • Add tomatoes, chili beans, corn & water
  • Cover & cook on low 6-8 hours
  • Add shredded cheese, cook 15 min
  • Freezer Bag Instructions:
  • Brown ground beef, drain
  • While beef is cooking, dice 1 onion
  • Place all ingredients except potatoes into gallon size freezer safe bag
  • Label & lay bag flat to freeze
  • Remove from freezer the night before you plan to use it
  • Place contents of bag into slow cooker
  • Dice 5 potatoes and add to slow cooker
  • Cook on low 6-8 hours
  • Add shredded cheese, cook 15 min
