Ingredients

  • 3 to 4 pounds country style pork ribs
  • 1 tablespoon brown sugar
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon onion powder
  • 1 teaspoon black pepper
  • 1 teaspoon ground cumin
  • ¾ cup beef broth
  • ½ cup barbecue sauce
  • 2 teaspoons xanthan gum OR 1 tablespoon cornstarch with 2 tablespoons water

Instructions

  • Mix together brown sugar, garlic powder, smoked paprika, onion powder, black pepper, ground cumin, beef broth, and barbecue sauce.
  • Place the pork ribs into the electric pressure cooker. Cover with sauce.
  • Close and set the valve to sealing. Set the pressure cooker to manual or pressure cook on high pressure for 45 minutes. Naturally release for 5 to 10 minutes before a quick release.
  • Remove ribs from pressure cooker and reset the pressure cooker to “saute.” Whisk in xanthan gum or slurry (cornstarch mixed with wateand stir until the sauce thickens. Place pork ribs back in the pressure cooker to coat with sauce.
