Ingredients

  • 1-2 lbs ground beef
  • 1 medium onion chopped
  • 2 green peppers sliced
  • 2 red peppers sliced
  • 2 15 oz cans diced tomatoes undrained
  • 1 15 oz can of tomato sauce
  • 1 15 oz can of water
  • 1 can corn optional
  • 1 cup cooked brown rice
  • 1 clove garlic
  • 1/2 tsp parsley
  • 1/2 tsp oregano
  • 2 Tablespoons brown sugar
  • 2 tsp salt
  • 1 1/2 tsp pepper

Instructions

  • Brown ground beef with onion in Instant Pot using the Saute function.
  • Drain beef and onions.
  • Add sliced peppers, tomatoes and remaining ingredients, except rice to the Instant Pot.
  • Stir in cooked rice.
  • Cook at high pressure 7 minutes. ┬áThen wait 10 minutes before releasing the pressure.
