I bought up a bunch of sausage for $1 a pound, so I’m trying to throw in some extra sausage recipes to help us eat a little cheaper. THis Brunch Casserole Recipe is not only cheap but super easy. I hope you don’t mind! We love eating breakfast-y meals for supper.
Ingredients: 1 lb sausage, browned & drained 1 can condensed cream of potato soup 1 can cheddar cheese soup 2/3 cup milk 2 t. Worcestershire sauce 1/4 t. pepper 1 onion, chopped 1 green pepper, chopped 1 bag of hashbrowns (20 oz or so) 1 10 oz bag of frozen broccoli, cauliflower and carrots (can substitute something else if your store doesn’t carry this) 1/2 cup cheddar cheese
Combine all ingredients except frozen veggies and hashbrowns in freezer safe bag. Label & Freeze.
On Cooking Day:
In slow cooker, mix together contents from freezer bag, vegetables and hashbrowns. Cook on low for 5 to 6 hours or high for 2.5 to 3 hours. Sprinkle with cheese before serving.*Some of the links in this post are affiliate links.
