Sarah's Story....

I remember when I first felt like I hit my breaking point when it came to preparing food AND trying to eat healthy and lose weight.

I was always waiting too long to start dinner, so I’d opt for easy convenience foods instead of healthier options.

My health seemed to be declining. My thyroid was out of whack and my blood pressure was climbing.  My weight was also inching up year after year.

I couldn’t seem to stay on track with any eating plan because I was so busy all the time.

When I did stick to an eating plan, it felt like I was thinking about food ALL DAY.  EVERY DAY.

I didn’t have time to think about food all the time, whether it was healthy food or non healthy food.

I just needed to eat and I needed to accomplish what feels like a thousand other things in a day.

My day would turn busy and I would end up grabbing anything that would feed me and my family a quick dinner with little effort, no longer caring about the results it was having on my body.

I was depressed and looking down on myself, always thinking tomorrow I would do better.

But tomorrow only came occasionally and not consistently.  Because it was too much work to think it all through.

But now, I figured out a better way.

There’s no need for me to feel so helpless.

I finally decided that it had to get better. We had to fix this problem.

I am often amazed at how long I can spend making a grocery list.  If you purchase this plan, you will no longer have to make your grocery list for your dinners each week.  You can quickly run to the store, saving you time and money in the long run.  Each ingredient has  a recipe number by it, so that if you decide not to make one of the recipes, you can easily mark that ingredient off of your shopping list .                                                                  

Assembly Instructions

I know you may not be familiar with assembling your meals for the week all at once, so in each meal plan, I include step-by-step instructions on how to get your meals ready for the freezer.  I walk you through what order to do things in, in order to get your meals assembled in the fastest way possible.  We will be chopping similar items all at once!

Side Suggestions

Each recipe has side dish suggestions attached to it.  In addition, there is also a side suggestions shopping list that you can use, should you choose to use the given suggestions.

Labels

If you would like to place labels on your freezer bags, I've got printable labels with cooking instructions attached toward the end of each cookbook.  All you'll have to do is print it on printable label paper or on regular paper and tape it on.  

FAQ About the Low Carb Recipes

Low Carb Freezer to Slow Cooker Meal Plan
  • What do you consider low carb?  In my years of experience with losing weight after having had 7 babies, I figured out that the best way for me to lose weight is to keep it simple.  By going on a low carb diet, I’m eliminating sugar and processed ingredients and I’m increasing protein, vegetables and healthy fats.  These recipes will not have white flour, white rice, sugar (or any form of it), corn or potatoes (because they are starchy, fattening vegetables).  They will be heavy in meats and vegetables.  They will not contain pasta.  On occasion, I may suggest a low carb tortilla or brown rice.  For me, personally, I aim to keep each of the recipes under 9 net carbs per serving, but most of them will be 6 net carbs per serving or less. 

  • Do you ever use sweeteners?  On occasion, if the recipe calls for a sweetener, I will use stevia.  I recommend buying a bag of THM stevia powder on Amazon to keep on hand, as it is the best tasting and does not have a bad after taste.

  • What do you use as a thickener?  It all depends on the recipe.  In calculating the carb count of corn starch, I discovered that there are only 7 carbs in a tablespoon and if that 7 carbs is stretched out across 6 servings, then it would add slightly over 1 carb per serving, however I know that is still too much for some recipes and/or people.  Most of the recipes that require thickening in this meal plan, will either be given 2 options (corn starch or xantham gum) and you can choose based on your carb and nutritional preferences.  Other recipes may be simmered for a while to reduce the excess liquid a little.  I may use cream cheese or sour cream to increase the thickness as well.  Feel free to substitute your preferred thickener on these recipes.

  • Are they gluten free?  By being low carb, they typically ARE gluten free.  There may be occasional recipes that you would need to make a substitution on, but for the most part, yes, gluten free!  I’m planning to begin feeding my daughter who has epilepsy, a gluten free diet to see if it helps, so this will be for me, too!

  • Less Stress.  One of the things that causes me stress, is always having decisions to make. When you don't have to make the decisions about dinner, your stress level will go down. Also, by not having to hurry around to cook dinner in a timely manner, your meal times will be so much less stressful. Picture yourself at dinner time on a regular basis and think about the chaos that often surrounds it. Now, picture you walking into the kitchen at 5:00 p.m. with dinner already ready. You may have to make a quick side dish, but that's nothing compared to starting a dinner from scratch. This can happen on a daily basis and you'll get delicious food! No more take-out every other night!
  • Lose Weight.  By eating a low carb diet, it is much easier to lose weight.  Having your low carb meals planned for you, it makes your weight loss plan simpler, without as much thought

What if I Don't Have Enough Time to Assemble The Meals Each Week?


If you don't have the time to assemble a week at a time, you can assemble a day at a time. You don't have to prepare them in advance, it's just a nice little asset to help you, if you can make the time for that.  A typical meal preparation time takes approximately 1 hour, but sometimes takes closer to 2 hours, depending on the recipes involved.

What If I don't Like The Meals?

How one family of 4 puts the menu to use


"I purchased the  plan and have been preparing my freezer to crockpot meals for four weeks now.

I do my shopping on Saturday and prep on Sunday. I choose 5 recipes a week, and I actually double the recipes to create 2 sets of the weekly meals (making 10 meals) … I pop one set into the refrigerator freezer for the coming week, and I store the second set in the deep freezer for a future week; I have another full month of meals already on standby! It takes me about 2 hours.

On average, I spend around $200 a week on groceries (buying ONLY organic/hormone-free meat, veggies, pastas, sauces, etc.) … That is $20 a meal for a family of 4, AND each dinner leaves us with leftovers for 4 (so really, each meal could feed 8!).

I package leftovers every night in individual, 2-compartment trays with lids (bpa free, freezer/dishwasher/microwave safe) … The hubby takes one to work for lunch and my homeschooled child and I eat two for lunch. What about the other 2 nights of the week, you ask? … I only prepped 5 meals for the week.
