When I last bought my Bountiful Baskets basket, in it I received kale. I’ve often heard of the nutritional benefits of kale, but I don’t usually purchase it at the store. Honestly, I figured I wouldn’t really like it. It just reminds me of the decorative greens that restaurants put on the salad bar or on your plate. I remember whispering as a child, “are we supposed to eat that?”. I assured anyone sitting with me that I was sure that it was inedible. LOL Of course, that’s far from the truth. Little did I know, just how good for you kale really is.
Well, since I was the proud owner of a bright green bunch of kale, it was time I found a recipe that I could use it in. Of course, you know me… it must go in the crockpot! My husband is a little bit nervous when he sees bright green in his soups, so he almost decided to skip dinner that night. When he heard our 4 year old raving about how good the soup was, that piqued his curiosity and my husband reluctantly came and got a bowl to try some. He was pleasantly surprised and exclaimed that it was one of the best soups he’s had in a long time! I must say that I agree wholeheartedly. That makes me especially happy since I can eat it on my diet! Here’s the recipe that I used:
Creamy Chicken & Kale Soup Recipe for the Slow Cooker
Ingredients
- 2 pounds of boneless skinless chicken breasts
- 1 large onion diced
- 3 large carrots peeled and sliced
- 3 15 oz cans of chicken broth
- 1 small bunch of kale torn or sliced into bite sized pieces
- 1/2 tsp salt
- 1/4 tsp pepper
- 1 cup heavy cream
Instructions
- Place whole chicken breasts, onion, carrots, chicken broth, salt and pepper in slow cooker.
- Cook on low for 7 hours or on high for 3 hours.
- When you are about an hour from dinner time, add kale and heavy cream.
- Chop up chicken into bite sized pieces with kitchen shears.
- Cook on low for another hour.
- Serve in bowls. This would be excellent with bread if you're not going low carb. If you are, try a salad instead.
Freezer to Slow Cooker Instructions:
- Place chicken breasts, onions, carrots, salt and pepper in a gallon size freezer bag.
- Lay flat, label and freeze.
- On cooking day, place contents of freezer bag in the bottom of your slow cooker.
- Add 3 cans of chicken broth to the slow cooker.
- Cook on low for 7 hours or on high for 3 hours.
- When you are about an hour from dinner time, add kale and heavy cream.
- Chop up chicken into bite sized pieces with kitchen shears.
- Cook on low for another hour.
