I’ve never actually bought a turkey breast without the rest of the turkey, until I bought this one. I thawed it out and was a little surprised by how small it was. One 2-3 pound turkey breast wasn’t going to be big enough for our big family of 9. Really, I should’ve bought a 5 pound one. I was down to the last minute though for choosing dinner foods, so I decided to just add some chicken breasts to the mix, to give me enough meat to go around. It worked out well. The turkey breast tasted slightly better to me, but the chicken was plenty good, too.
In fact, I think I’m going to use this recipe as a staple for my chicken salads. I’m trying to increase my veggies and exercise, to hopefully help me lose weight. Lemon pepper may have sugar in it, so if you’re looking to exclude all sugar, pay attention to the ingredients list (not the grams of sugar) and either find a lemon pepper without sugar or substitute fresh lemons and pepper instead.
