These easy chicken enchilada nachos are a HUGE hit in our home. We always have Mexican food on Saturdays. And to be frank, my gang wouldn’t mind one bit if we had Mexican night several times per week.
I like to have a slow cooker meal Saturday nights because we enjoy family game nights and we try to get to bed at reasonable time because we attend the early worship service Sunday morning.

Chicken Enchilada Nachos in the Slow Cooker
Ingredients
- 3 lbs of chicken frozen
- 1 15 oz enchilada sauce
- 1 Taco Seasoning Packet
- 2 c of cheddar cheese shredded
- Tortilla Chips
- Toppings of choice
Instructions
- Place frozen chicken in slow cooker
- Pour enchilada sauce and taco seasoning on top of chicken
- Cook on low for 6-8 hours
- Shred Chicken
- Serve chicken mixture on top of tortilla chips or in soft flour tortillas and add cheese along with toppings of your choice
- We love refried beans with our nachos and tacos. And it's always a treat when I make our homemade salsa to serve on Mexican Night!
