Nutritious Meals, in 20 Minutes

 

Do you ever struggle with getting dinner on the table in a timely manner?  I know that is one of my weaknesses, that’s for sure.  (Remember me, the procrastinator….even when it comes to dinner!)  What if you had a list of 4 weeks worth of meals, that only took 20 minutes to prepare?

My friend LeighAnn has written an E-book called 20 Minute Meals:  Giving Weary Chefs Grace While Keeping Families Healthy that has a month’s worth of meals in it and they’re all healthy and nutritious!  Besides being healthy, the next best thing about all of her recipes  is that they take only 20 minutes to prepare.  From beginning cook time to on the table.  Amazing for this busy mama!

I decided that before I could tell you all about this e-book, I’d better put one of her recipes to the test.  You know, to make sure her recipes were any good.  We ate the Beefy Skillet Dish.  I followed all of her directions (almost) and sure enough, we were eating within 20 minutes.  I say I only almost followed her directions because I ended up forgetting to add the black beans to the dish.  I was completely done eating when I thought…..”where were the black beans?”  That was a great big Duh…moment, lol.  It was still good, but I’m sure it would’ve been even better with the added taste and protein!  The recipe passed our family’s test and we would definitely eat it again.  I’m excited to try even more of the recipes in the e-book.

What I like about it:

 

  • A full month menu & shopping list
  • A week week by week menu & shopping list
  • Recipes that are easy to follow and understand
  • Each recipe has a picture, for all of you visual people out there!
  • Printable planning sheets for your own menu, pantry inventory and grocery list.
  • A large variety of foods & different cuts of meats are spread throughout the book, so you’re not eating the same types of things over and over.

The only thing that I would change about it is that it’s made for smaller families, so the serving size is small for us.  Of course, that’s the way most cook books and recipes are that I run into, so it’s not a big deal at all.  I’m totally used to doubling recipes!  That’s what happens when you have 8 people in your family.

    This is a great review! I thought about the portion sizes being hard for larger families. I went back and forth, but settled on the smaller since my family is just 3 of us! I couldn't be sure of the portions. BUT I will do a 2nd edition someday. I will keep this in mind!! Thanks for your review, Sarah! So helpful!
